Course Description

During the course of this nutrition class, we will explore topics such as the body's handling of carbohydrate, protein and fats, functions of vitamins and minerals, the use of supplements, the role of water in the human body, energy balance, obesity theories and treatments, as well as digestion, absorption and transport of nutrients. Students will be required to do a personal diet inventory at the end of the course to analyze present dietary patterns. Students will learn to distinguish between scientific information and nutrition hype by checking popular media including the internet. Students are independent and work at their own pace. Science databases will be discussed in order for students to access up to date research and sound consumer information regarding nutrients and supplements.

Online courses move quickly and it may be difficult to be successful if reliable e-mail and internet access is not available.

Performance Evaluation

Weekly Questions:

Each week essay topics, based on weekly lectures, simple field assignments or assigned websites will be assigned for grade points. These questions will be found at the end of each lecture and will be due the Sunday of each week..

While these weekly assignments may ask specific questions, I expect the papers to look like "college level" papers. This includes the use of proper English, sentence structure and punctuation. If English is your second language, please have someone else proof-read your paper for grammar and sentence structure. Please number each of your answers to correspond to the question number. This will make grading your papers easier and less risk for lost points. Do not write these assignments in essay format. Short but complete answers are fine.

Late Assignments:

Late assignments will not be accepted unless prior arrangements have been made.

Important Information regarding written assignments:

  1. Please use proper English when writing weekly assignments.
  2. Please include background information about the topic you are referring to.
  3. For all assignments, make sure you have fulfilled the objectives or requirements. Please go back and re-read the assignment to determine the completeness of your submission.
  4. Always cite your sources.
  5. If an assignment asks you to go to a website, GO THERE, and then incorporate some of the information into your assignment.
  6. Do not use e-mail shorthand in any of your assignments. This is a college course, all assignments must look like it.
  7. All weekly assignments will be graded on how well you answer the question presented.
  8. Label all assignments with your name, class, and assignment name.

Exams:

Weekly quizzes, a Mid-term Exam and a Final Exam will be based on topics which have been discussed in the course.

If students reside in the area, the final exam is expected to be proctored in the Barstow College Computer Lab.

If the student lives out of the area a proctor will be needed for the final exam. The student must find an acceptable proctor and location. I must pre-approve the proctor prior to the final exam. Acceptable sites include library, military education office, or school. Acceptable proctors include a librarian, a military education officer, a teacher, or clergy member.

All proctor forms must be approved by the end of the second week of the course. Proctors must have access to e-mail for correspondence with myself. Proctors will be sent information in regards to the final exam.

Weekly quizzes can be taken on any computer. These quizzes are timed to discourage you from looking up every single answer. Please be sure to be familiar with the information before you sit down to take the quiz. You may access and take weekly quizzes only one time. If you access the quiz more than once, you will receive a "0" for that quiz.

Regular Effective Contact:

As with many online courses, regular and effective communication is critical to success in the course. Therefore, it is important to impose and meet assignment deadlines. If you do not turn in your first assignment on time, you will be dropped from the course.

Also, you will be expected to participate in the Discussion Board. Each week I will post a discussion topic and you will be expected to post a response. The grade will depend on the quality of your post response. Pretend you are in class and the instructor has asked your opinion or your "take" on a matter. It is the same.

If you do not fully participate in the course (discussion forum, quizzes, and homework) by Sunday at 11:45PM the first week, you will be automatically dropped from the course. You may or may not be notified. If you are failing the course after the 3rd quiz, you will be dropped from the course. I will attempt to contact you as soon as I notice you are having difficulty to try to help you prior to the 3rd failed quiz and dropping you.

E-mail:

Please ensure that you put your name and the date your class started (_________) in the SUBJECT line when you e-mail. This will help me identify you and which course you are in. Any assignment or e-mail correspondence without identification will not be open and may be deleted. This is to protect against potential viruses. You can expect I will respond to e-mail within 48 hours.

Grading Criteria:

  • Weekly Essay Questions: Weekly points vary. Total 181 points
  • Weekly Quizzes: Graded as %. Total 600 points
  • Discussion Board Posting: 10 Points each week
  • Personal Diet Inventory: 70 Points
  • Mid-term Exam: 100 Points
  • Final Exam: 100 Points

GRADING

A= 90-100%

B= 80-89%

C= 70-79%

D= 60-69%

F= 59%

To determine your grade throughout the semester: Take the points you have accumulated to date and divide that number by the possible points to date. This will give you a percentage.

Email Updates

One of the primary methods of contact in an online course is email. Your college is capable of extracting student names and email addresses from our registration system. The purpose of extracting this information is two fold. The information will be used by the instructor to remain in contact with the class in order to provide information necessary for the students' academic success. The information will also be used to send emails to the students from the college administration. The emails sent by the college administration will consist of links to course surveys which will be used to improve our online courses, important announcements for students, and links to college surveys, which will be used to satisfy requirements placed on the college by the California Community College Chancellor's Office. The college will not use this information to advertise any products and will not share student email addresses with any other organization.
