Lesson 1

Introduction:

Two primary determinants of health are genetics and lifestyle. Six of the ten chronic diseases in the United States (heart disease, cancer, stroke, lung diseases, diabetes and liver diseases) may be prevented by appropriate lifestyle behaviors. Balance, variety and moderation are the keys to a healthful lifestyle.

The primary purpose of the food we eat is to provide us with the more than 40 essential nutrients for the numerous physiological and biochemical functions that support life. These nutrients are obtained through six major nutrient classes, carbohydrates, fats, proteins, vitamins, minerals and water.

Some foods contain a greater proportion of key nutrients and have greater nutrient density or nutrient value than other foods. Understanding nutrient labels is a key to consuming foods with higher nutrient values and consuming less foods with empty calories. The Food Guide Pyramid should be viewed as an educational approach or guide to help individuals obtain proper nutrition.
